Oolong Summer White Peach and Mango

Taiwan is the number one producer of amazingly fragrant and floral oolong teas.
Oolong tea is a semi-oxidized tea which means it is more oxidized than green tea but less oxidized than black tea. That is why the oolong teas have the broadest range of flavors and aromas. Compared with China’s long history of tea, Taiwan has only been seriously producing tea since the 1850s but has become famous for its high quality and amazingly fragrant oolongs. Taiwanese oolongs tend to be on the greener side of the spectrum and produce a refreshing and floral taste with a sweet finish that blends well with an array of fruit flavors. One of Taiwan’s storied oolongs, Wenshan Baozhong, is such a tea and provides the perfect backdrop for two of LUPICIA’s top-selling flavored oolong teas MOMO OOLONG SUPER GRADE and RIPE MANGO OOLONG. Baozhong has been cultivated in Taiwan for over 100 years, and it is the crown jewel of the Taiwanese oolongs. The small town of Pinglin, where the tea is harvested and produced, takes its star oolong very seriously. So much so that its streetlamps are shaped like teapots. The oolong itself is very fragrant, with notes of jasmine and gardenia permeating the leaves, and the taste of sweet flowery notes running through the brew.

With summer in full swing, the light and refreshing taste will definitely make you forget about the heat. Making cold brew iced tea is so easy too. Just steep the tea in cold water and place in the refrigerator overnight. You will have perfect iced tea by morning. There is no need to boil any water on those hot summer days.
In addition to thirst-quenching iced tea, Momo Oolong and Ripe Mango Oolong are excellent additions for refreshing summer desserts.
- Ripe Mango Oolong
Gelatin Dessert - You will need : Ripe Mango Oolong tea, powdered gelatin and sugar.
- 1.Soak 2 ½ tbsp of powdered gelatin in ˝ cup of cool water.
- 2.In a separate pot, steep 4 heaping tsp of tea in 3 ½ cup of hot water for 2 ½ minutes and strain.
- 3.Add the gelatin and 4 tbsp of sugar and stir until dissolved.
- 4.Divide mixture into 4 servings and refrigerate until firm.
* Serving suggestion : Top with fresh mango and condensed milk or mango flavored rum.
- Momo Oolong Tea and Fresh Ginger Granita
- You will need : Momo Oolong tea, Momo Oolong tea honey and fresh ginger.
- 1.Steep 6 tsp of Momo Oolong tea and 1 tsp of freshly grated ginger in 2 cup of hot water for 2 ½ minutes and strain.
- 2.Add 2 tbsp of Momo Oolong tea honey and stir well.
- 3.Pour into a freezer safe plastic container and place in the freezer after the mixture cools to room temperature.
- 4.Stir the mixture every 30 minutes with a fork until you get granules of ice.
* Serving suggestion : Top with fresh white peaches and condensed milk or elderflower flavored liqueur for a more sophisticated dessert.
