*This is a standard way of making tea. Simply adjust the amount of tea leaves and brewing time according to your taste.
*Hot water temperature for green teas:The tastes of Japanese green tea, Chinese green tea, white tea and yellow tea are different according to the water temperature used. When you want to bring out stronger aroma in teas, use higher water temperatures, and when you want to extract a more sweet and rich flavor, try using a little lower-temperature water.

Sencha

  1. Put the tea leaves into the teapot.
    (3.5-4g =approx. 2 teaspoonfuls per person)

  2. Pour boiling water into the teacups and allow it to cool down (158-167F) before pouring the hot water into the teapot (3.7fl oz per person) and allow it to brew for 45 seconds to 1 minute.
*Hot water rather than boiling water is most effective for extracting the umami of the tea.

Iced Tea

There are 2 ways of making iced tea that we recommend. If you like it full-bodied and want to make it quick, we recommend to make it with hot water. If you like it mild, we recommend to make it with cold water.

Iced tea made from cold water

  1. Attach a tea strainer to a handy cooler. Put tea leaves (approx. 0.50oz) in the strainer and pour 34fl oz of water.

  2. Allow it to stand overnight (8-10 hours) at room temperature.
*For Japanese green tea, allow it to stand for 3-5 hours.
*If room temperature is high, put generous amount of tea leaves and keep refrigerated during the infusion.

  3. Detach the strainer and cool it in a refrigerator.
*Consume the iced tea as soon as possible.
