Masala Chai


India, a major tea production center, grows spices such as pepper and cardamom in abundance. Indians love masala chai, a beverage made by brewing tea with a mixture of spice. Why do people living in a tropical country drink hot tea like this? The reason is that hot chai with spices helps people perspire. With every sip of a cup of masala chai, people feel vigorous enough to survive the sweltering heat.
In India, where the climate is harsh, people drink chai with a generous amount of sugar and spices as a source of power. Every household in India has its own unique recipe for chai. Some Indians are more economical: "I use only ginger for everyday tea. Because cardamom is expensive, I serve chai with cardamom only to my guests."
Every chai stand in every town serves its own distinctive chai. Everyone has their own favorites.

How to prepare Masala Chai
- Pour 150ml of water into a small pan and heat.
- When water is boiled, add 8 to 10 grams (3 full teaspoons) of tea leaves and 2 to 2.5 grams (1 light teaspoon) of spices of your choice.
- Boil it at low heat for about 2 minutes to infuse spices. Add 150ml of milk and, if you like, sugar or honey. Then turn the heat up for a while.
- When the tea starts bubbling, turn the heat down and boil the tea for about 3 minutes. Be careful not to make the tea boil over.
- Put a tea strainer over a cup to catch tea leaves. It is time to sip a cup of Masala Chai.
* This is a recipe for two cups of Masala Chai. Adjust the amount of water, milk and sugar to your preference.
Recommended Combinations
Assam & Ginger + Cardamon
Assam tea is ideal for chai. A spicy cup of tea that invigorates you from within.
Add 8 to 10 grams of Assam tea, 2 or 3 slices of ginger and 1 or 2 pieces of lightly crushed cardamom to water. Pour milk and boil for a while.
Darjeeling & Black Pepper
A hot flavor goes perfectly well with the scent of Darjeeling tea. This is an exquisite recipe recommended by our staff.
Add 5 to 6 pieces of crushed black pepper to 2.5 to 3 grams of second flush Darjeeling tea leaves. Pour 110ml of hot wtaer. Brew for 2 or 3 minutes.
Thé au Chocolat & Pepper
The sharp hot taste of chili pepper accentuates the rich and sweet flavor of chocolate.
Add 2.5 to 3 grams of tea leaves and 1 small chili pepper to a cup. Pour 110ml of hot water and brew for about 3 minutes.
